Shin is such a lovely meat – it’s nice and gelatinous and sweet in flavour. Together with the bitter stout it makes for a great combination.

Ingredients
For the beef
1tbspolive oil
salt and pepperto season
500gbeef shincut up into bite size pieces
1tbspflourto sprinkle over beef
1red onionssliced
4clovesgarlic
fresh rosemary
70 - 100gsugar
600 - 700mlGuinness
To serve with
1tbspolive oil
2sweet potatoesroasted until completely cooked
buttera generous amount
brown sugara sprinkle
parsleyfreshly chopped as garnish
Instructions
Preheat the oven to 180°C
Season the beef with salt and pepper. Heat oil in a large pot then on a moderate temperature brown the beef. Remove the beef from the pot. Lightly coat the beef in flour.
Add onions to the pot then sauté the onions on a low temperature with the lid on until they soften.
Add the garlic, rosemary & sugar then add beef back into the pot, pour in the Guinness. Bring the contents of the pot to a simmer and braise in the oven until the meat is tender. This will take 2-3hours.
For the sweet potatoes, cut the roasted sweet potatoes in half, arrange the butter inside the sweet potato and sprinkle brown sugar on top then roast in the oven until the butter melts sugar caramelizes onto the sweet potato.
To serve, arrange the beef shin in a bowl and serve with the sweet potato and a sprinkle of freshly chopped parsley.
